Chilaquiles Better Than Abuela’s

When having cheat meals I prefer to make them myself to ensure that the food is made from quality ingredients, to know EXACTLY what us going into my food, and can reduce the amount of oils, salt, and sugar that I am going to include in my meal.

Ingredients:

Yields One Serving

• 2-3 Corn Tortillas

• Generous amount of Avocado Oil (4-6 tablespoons)

• 2 tablespoons of Salsa (I use Habanero Salsa)

• Chorizo (or bacon)

• 3 eggs

• Fresh chopped jalapeños

• ½ teaspoon Minced garlic

• Ground black pepper

• Adobo

 

Steps:

• Set the pan to medium-high heat and pour a generous amount of Avocado Oil into the pan. Once the pan is hot, add in the chopped tortillas, add in your Adobo and occasionally stir the chips until crispy. Drain the oil and add chips into a bowl with paper towels.

• Cook the chorizo or bacon on medium heat, then add the jalapeños, and minced garlic. Once the meat is done cooking, add in the eggs and ground black pepper.

• Once the eggs are almost done, add in your salsa, and tortillas into the pan.

• Gently mix everything together in the bowl, and cook until crispy on low-medium heat. [/vc_column_text][/vc_column][/vc_row]
